Step 1

Line a square baking dish with parchment paper (8 in or 9 in) and set aside. 

Place the graham crackers in a food processor, and pulse until fine. 

Step 2

Transfer 2 cups of the crumbs into a bowl and add the melted butter. Mix everything together until moistened and press into the prepared baking dish. Spread it evenly and press it down with your fingers.

Step 3

In the food processor, add the cream cheese, strawberries, Firebee Elderberry Honey, and vanilla. Blend until smooth and well combined.

Step 4

Mix the heavy cream by itself with a hand mixer until stiff peaks form. Fold it into your cream cheese mixture, but be careful not to overmix. 

Step 5

Pour the filling on top of the graham cracker crust, spreading it out evenly. Cover with plastic wrap and freeze overnight.

Step 6

When ready to serve, remove from the pan using the parchment paper and cut into bars. Serve with whipped cream and additional strawberries if desired.
