Spicy Red & Green Enchiladas

Can’t decide between red sauce and green sauce? Now you don’t have to! These enchiladas are the perfect choice when you have a house divided. They are easy to make and make a great weeknight meal. 

Ingredients

Yields 8 enchiladas
Salad
  • 2 lbs. boneless, skinless chicken breasts, cooked and shredded
  • 2 Tbsp. Taco seasoning
  • 8 oz. Monterey Jack cheese, shredded and divided
  • 1/4 c. Firebee Spicy Honey
  • 1/2 - 1 cup salsa
  • 8 fajita size flour tortillas
  • 8 oz. can red enchilada sauce
  • 8 oz. can green enchilada sauce
  • Desired Toppings: diced tomatoes, chopped cilantro, avocado, sour cream, black olives, etc…


Instructions

Step 1

Preheat the oven to 350 degrees Fahrenheit and spray a 9” x 13” pan with nonstick cooking spray. Spread about 3 tablespoons of red sauce along one half of the pan lengthwise. Spread the same amount of green sauce on the other half of the pan. 

Step 2

In a large bowl, stir together the chicken, taco seasoning, 2/3 of the cheese, the Firebee Spicy Honey, and enough salsa to moisten the filling mixture. 

Step 3

Fill the 8 flour tortillas evenly with filling. Roll the tortillas and place in the pan. Pour the remaining red enchilada sauce over the red half and then pour the remaining green sauce over the green half. Run a butter knife through the enchiladas to help prevent them from sticking together after baking.

Step 4

Sprinkle the enchiladas with remaining cheese and bake, covered with foil, for 30 minutes or until hot and melted.

Step 5

Top enchiladas with any desired toppings and serve hot.
