Oven Baked Chicken Parmesan

Oven Baked Chicken Parmesan

This easy to make meal comes together in about 30 minutes and makes a great weeknight meal! 

Ingredients

Yields 2 Servings
  • 1 c. Bisquick baking mix
  • 1/4 c. parmesan shredded cheese
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. Fuhgeddabodit Seasoning
  • 2 Tbsp. butter
  • 2 eggs
  • 2 chicken breasts
  • Mariana sauce 
  • spaghetti
  • mozzarella cheese slices

Instructions

Step 1

Preheat the oven to 400 degrees Fahrenheit and grease a 9" x 13" baking dish.  

Step 2

Mix together the Bisquick, parmesan, garlic powder, onion powder, salt, pepper, and Fuhgeddaboudit Seasoning in a shallow bowl. 

In a second shallow bowl, whisk the two eggs together.

Step 3

Dip the chicken breasts, one at a time, in the egg mixture, and then into the Bisquick mixture. Make sure to completely coat them. 

Step 4

Place the breaded chicken breasts into the prepared baking dish. Repeat with the second chicken breast. Discard any extra egg and breading.

Step 5

Cut up the butter and dot the breaded chicken before placing into the oven. Bake for 20 minutes, or until the breading is browned and the internal temperature of the chicken reaches 165 degrees. Add additional butter during cooking if you see any dry areas.

Step 6

While the chicken is cooking, prepare your spaghetti according to the package directions. Strain the spaghetti and split it between two plates. Top the spaghetti with marinara sauce and then the cooked chicken breasts. Top with sliced mozzarella cheese and enjoy!
