Mini Pumpkin Pies
Easy enough for the kids to make, these mini pumpkin pies are the new go-to dessert for fall!
Ingredients
- 2 pre-made pie crusts
- 1/2 c. pumpkin puree
- 1/4 c. brown sugar
- 1 Tbsp. Firebee Pumpkin Spice Honey
- 1/4 tsp. pumpkin pie spice
- 2 eggs
Instructions
Step 1
Allow the pie crusts to come to room temperature. Preheat oven to 350 degrees Fahrenheit. You will need a large cookie sheet.
Step 2
Unroll the dough and use a pumpkin shaped cookie cutter to cut out pumpkin shapes. You will need 16 pumpkins for the 8 mini pies. Place 8 on the cookie sheet and set the rest aside.
Step 3
Mix together all of the ingredients except for 1 egg. Place a small spoonful of the pumpkin mixture in the center of each of the pumpkins on the cookie sheet. Top with the other pumpkin cut outs, lining up the edges.
Step 4
Using a fork, press down on the edges to seal them. Go all around the edges of each pumpkin to ensure that the pumpkin mixture doesn't leak out. Take the remaining egg and beat it and then brush over the prepared mini pies.
Step 5
Bake for 20-25 minutes or until golden brown.
