Lasagna Soup

Lasagna Soup

Your favorite Italian dish - as a soup! 

Ingredients

Yields 8-10servings

  • 1 lb. Italian sausage
  • 1 lb. ground beef
  • 1 large onion, diced
  • 4 tsp. garlic, mined
  • 2 Tbsp. Fuhgeddaboudit Seasoning
  • 1 tsp. red pepper flakes
  • 6 oz. tomato paste
  • 2 cans diced tomatoes with oregano and basil
  • 8 c. chicken broth
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 c. Mafalda pasta
Cheese Topping
  • 1 c. ricotta cheese
  • 1/2 c. parmesan cheese, shredded
  • 1/2 c. mozzarella cheese, shredded

Instructions

Step 1

In a large pot, brown and crumble the ground beef and Italian sausage. Drain the grease. 

Step 2

Add in the onions and garlic and cook along with the meat until the onions are soft. 

Step 3

Add in the Fuhgeddaboudit Seasoning, red pepper flakes, tomato paste, diced tomatoes, chicken broth, salt, and pepper. Heat, stirring, over medium-high heat until the soup boils.

Step 4

Once it is boiling, add the noodles and reduce the heat to medium. Allow to cook for around 8-10 minutes, or until the noodles are tender.

Step 5

While the soup is cooking, mix together the cheese topping ingredients. 

Step 6


Serve the soup with the cheese topping and enjoy!
