Chocolate Marshmallow Cookies
These cookies are moist and cake like and have the taste of toasted marshmallows on top - perfect for a winter night!
Ingredients
- 2 c. flour
- 3/4 c. unsweetened cocoa powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 c. butter, room temperature
- 1 c. Firebee Chocolate Honey
- 2 large eggs, room temperature
- 2 tsp. vanilla
- 1 jar (7 oz) marshmallow fluff
Instructions
Step 1
In the bowl of a stand mixer, cream together the butter and Firebee Chocolate Honey until light and fluffy.
Step 2
Add in the eggs and vanilla and mix to combine. Then add the dry ingredients, mixing on low speed just until the dough comes together.
Step 3
Cover and refrigerate for at least 30 minutes. This will make the dough a lot easier to work with, so don't skip this step!
Step 4
Preheat your oven to 350 degrees Fahrenheit and line your baking sheet with parchment paper.
Step 5
Scoop tablespoon size balls of dough onto the prepared baking sheets and flatten them out with your hand. Place a dollop of marshmallow fluff on top of each one.
Step 6
Bake the cookies for 10-12 minutes or until the cookies are set around the edges and your marshmallow fluff is starting to brown. Allow them to cool for a few minutes before enjoying!
